Blueberry Lemon Oatmeal Cookies
It's been over half a month since my last post and I don't exactly know why. I just haven't been in the mood to write. I've been taking pictures of food and I've been writing down the recipes, but the thought to writing about food has been smushed.

I'm starting to think it may be because over the last 2 months I've been trying to watch what I eat, and by that I don't mean staring at my food and making sure it doesn't do something crazy, but in order to do one of the most frustrating things, loose some weight. I want to be more healthy and I have a deadline (this May-June).

Unfortunately, the only way I know how to make it happen me is to analyze everything I eat, in-put the recipe over at Nutrition Data and then record what I'm eating (this takes me about half an hour for each meal I do from scratch that I haven't already made... and I don't make anything the exact same... ever) until such time as I get the hang of figuring out correct portion control (that's my problem more so than ingredients) on my own. It's working well but it's zapped my food writing/talking energy!

I haven't even done a Daring Baker's Challenge for the last 2 months (shame on me I know, but have you seen some of the things they want us to make? It's a form of  torture to make that stuff and only eat a little bit of it!). However I will be making more of an effort to get my butt to sit at the computer and write up more posts more often :D.

Blueberry Lemon Oatmeal Cookies
  • 1 cup (2 sticks) butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 1/2 teaspoon vanilla
  • 2 cups all purpose flour
  • 3 cups oatmeal
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup blueberries (can be substituted for a different berry of your choosing)
  • 1 teaspoon lemon juice
Beat together butter and sugar until light and fluffy. Add in vanilla and eggs, one at a time making sure they are incorporated well before adding the next.

In another bowl, stir together oats, flour, baking soda, and salt. Using a whisk works very well to mix them together so that they are evenly distributed.

Add the dry ingredients to the sugar/butter mix and mix together with a large spoon. Add in blueberries and lemon juice, mixing well.

Pre-heat your oven to 350F.

Using a soup spoon, place mounds of cookie dough onto a lightly greased/parchment paper lined cookie sheet. These don't spread out too much so you do not have to leave a bunch of room between cookies.

Place in the oven and allow to bake about  8-11 minutes (depending on how chewy or crisp you like yours) and are golden brown on top.

These came out fantastic! They were chewy, sweet but not too sweet, and had a nice burst of flavor when ever you bit into one of the blueberries.

So good that even the hubby and the kiddo liked them (and they don't like blueberries). This is a cookie that I'll definitely will be experimenting with more!

Great to see you back blogging. Talk about losing weight, I need to do some of that too. I think striking the right balance and also waking up to the go to the gym for me!

This combo of oats, lemon and blueberries sounds really good. I'll try it but I plan to use reduced-fat butter and better for you whole eggs like Eggland's Best eggs!Thanks for sharing.

It's ok that you haven't posted in a couple weeks, we're all still here :)

I use the nutrition data website pretty often to look up info on different items, but I never realized that there is a recipe analyzer until you mentioned it just now. Thank you! I'm totally going to start using it.

Good to see this post...it is a good one, it looks like my kinda cookie! I can totally relate with you about not wanting to post, sometimes it is hard to get motivated especially when you are trying to loose weight, good luck on your journey and I wish you the best!

These cookies look absolutely delicious! I bet they'd be totally fantastic with cranberries too, though blueberry is by far my favourite partner for lemon.
